Lentils Soup
Lentils are a great source of protein and fiber, making them a nutritious and filling ingredient in soups.

Rinse the lentils and set aside.

In a large pot, heat some oil and sauté the onion, carrot, celery, and garlic until they soften.

Add the lentils, vegetable broth, tomato paste, cumin, coriander, paprika, salt, and black pepper to the pot. Stir well.

Bring the mixture to a boil, then reduce the heat and let it simmer for about 30 minutes or until the lentils are tender.

Remove the pot from the heat and let the soup rest for 5 minutes.

Stir in the fresh parsley and lemon juice.
