In a large pot, bring vegetable broth to a boil.

Cut tofu into small cubes and add to the pot.

Slice shiitake mushrooms, carrot, bamboo shoots, and green onions, and add to the pot.

Mince garlic cloves and ginger, and add to the pot.

In a small bowl, mix soy sauce, rice vinegar, sriracha sauce, cornstarch, and water.

Pour the sauce mixture into the pot and stir well.

Reduce heat to low and simmer for 20 minutes.

Stir in sesame oil, salt, and black pepper.

Remove from heat and let it rest for 5 minutes.
