Peel back the husks of the corn without removing them completely. Remove the silk strands.

Brush each ear of corn with olive oil and sprinkle with salt and black pepper.

Pull the husks back over the corn and tie the ends with kitchen twine.

Place the corn on the grill and cook for about 15 minutes, turning occasionally, until the corn is tender and lightly charred.

Remove the corn from the grill and let it rest for 5 minutes.

Remove the husks and serve the corn on the cob with lime wedges and chopped cilantro.
